When it comes to hors d’oeuvres, I often feel a bit helpless, as I don’t care much for cheesy, creamy balls or dips. This recipe is relatively easy and offers flavorful, satisfying bites without getting overstuffed at holiday parties or before big meals. Salmon, of course, is a super source of Omega-3 Fats—a nutrient we often don’t get enough of—and benefits the heart and brain. If you can find it, I suggest the Echo Falls brand of Wild Alaska Sockeye Smoked Salmon, as it’s packaged in a way that makes the salmon slices easy to peel and arrange. Other nutrition bennies from this hors d’oeuvre include whole grain fiber, protein, calcium, vitamin D, and antioxidants.
Ingredients
20 2-inch squares of whole wheat flatbread, such as Naan brand or from whole wheat pizza dough rolled to about 1/4” thickness and baked. In a pinch, you can even use whole grain crackers, melba toast, or thin bread.
6 oz plain Yogurt: Icelandic or Greek
1/2 small Red Onion sliced very thin
1 T Capers
1 cup Microgreens or Watercress (optional
Directions
Spread 1-1.5 teaspoons of yogurt onto each flatbread
Arrange a 1-1.5 square inch slice of salmon on top of yogurt
Top with 1-2 pieces of red onion, capers, and greens or watercress.
Cover and keep refrigerated until about 15 minutes before serving
